Loaded sourdough bread tartine

I have to admit that I am a real snacker. My favourite snack are loaded sourdough bread tartine because they are easy to make, you can put any kind of topping you like on them and great for lunching in a rush.

My favourite bread to eat are the sourdough bread forms because they have a low glycemic index so help lower your blood sugar levels.

A little bit of do you know how…

Do you know how it is made? The grain is fermented with lactic acid bacteria and wild yeast. The grain is metabolised creating this lactic acid which slows down the rate at which glucose is released into the blood so you don’t get the spikes in insulin hence great for diabetics. They also make the flour more digestible so great for those with gluten intolerances, however it is not entirely gluten-free. Browse here for one I make which is divine!

Did you know that it is believed to have originated in ancient Egypt at 1,500BC and remained to be the customary form of breading rising until yeast was introduced. Sourdough relies on the wild yeast and lactic acid naturally found in bread to make the dough rise.

So back to my loaded sourdough.

The recipe for the bread itself you can find online, there are a ton of recipes available. Here is what I used for the topping. You can also top with humous and vegetables or you can go sweet (my cheat day eats), and top with Nutella and banana with some crushed almonds.



Sourdough topping:

  • Mashed avocado
  • Tomato pieces
  • Grilled aubergine slices
  • Grilled courgette slices
  • Mozzarella cheese
  • Rocket leaves

They are great when grilled in the oven so the cheese melts. I would pop them in the grill for about 5 minutes. Another favourite of mine, is pesto with vegetables topped with parmesan cheese and crushed olives.
