When cooking I like to kill two birds in one stone. I never cook for the tot and make a separate meal for me, like I have all the time in the world for that! Unless I am feeding him fish fingers and pizza. Although having said that, I usually end up eating half his pizza slice anyway.
I came across these vegetable fritters by accident really. I was racking my brains for an idea to incorporate some vegetables into his meal with only 15 minutes on the clock to prepare it.
It was quick, easy and most importantly tasty for the tot, he ate 3 all in one go:) An appetite like that doesn’t come very often. I shall include these fritters into his meal plans on a regular basis from now on. Not only is it quick and easy to prepare but they contain a good cocktail of nutrients and goodness. It helps contribute to the ‘five a day’ allowance.
Ingredients: to make about 8 small patties:
-1 courgette grated
-1 and 1/2 carrots grated
-10g of coconut flour/chickpea flour
-a pinch of paprika and turmeric powder
-Salt and pepper to taste
-a little water
1-Grate your courgette and carrots
2-Mix the rest of the ingredients in
7-Heat some oil and spoon your mixture into your pan. You can make your patties as small or as big as you like
All done (as the little one says).
Yoghurt makes a good dunking medium for kids. I ate it with a side of salad with some crumbled feta cheese and a poached egg.
