You can never have enough chocolate around the house. If you are anything like me in that you always need to munch on something, then these healthy vegan chocolate chip cookie bites are just what you need to sink your teeth in. Avoid biscuits/crisps and sweets like the plague and start leading a healthy life. The icing on the cake really is that there is no weighing/measuring and baking involved! Yea to no kitchen mess.
-About a 1/3 cup of oats
-3tbs of shredded coconut
-1 tbs of agave syrup
-3 tbs of cacao nibs
-1tsp of raisins
-1/2 cup of almond butter
-Some dark chocolate squares for the filling (I used milk chocolate as I ran out of dark chocolate)
1-Mix all the ingredients together in a bowl and allow set in the fridge for about 10 minutes or so
2-Take out of the fridge and form small mini cookies with your hands and flatten the tops
3-Melt your dark chocolate and spoon onto the cookie dough and place another cookie on top
Before you can say chocolate, eat immediately, or place on a plate and fridge for an hour. I prefer the first option. They literally melt in your mouth! One bite and I was hooked. Feel free to indulge as they are full of goodness. The oats are great sugar stabilisers, cacao nibs provide a great source of antioxidant and almond butter are full of healthy fats and protein.
You can even take a few in a box to work for desk munching. Why miss out on all the fun when you are work?
