
If you are stuck on a Valentines Day gift idea or what to do on Valentines or if you are a fan of Galantines Day then stay at home, cook some dinner and make these guilt-free treats. These raw vegan cookies are a example of love at first taste.
There is no baking involved and you don’t even need to use a weighing scale so you can just roughly measure the quantities. I have written the measurements in cups for easy making process.
These are similar to my raw vegan cookies I made before, but have adjusted a few of the ingredients. Again they are sugar-free so you can indulge in as many as you like and they are jam packed full of protein and healthy fats so good for the skin and hair.
Ingredients
- 1/2 cup of cashew nuts (soaked overnight and drained)
- 1/2 cup of gluten-free oats
- 1 cup of almond meal
- 4 table spoons of maple syrup
- 1 tsp of ground cinnamon
- 1/2 cup of shredded coconuts
- 4 tablespoon of almond butter
- 1 tsp of vanilla extract
- 2 tsp of chia seeds
- 2 tablespoon of cacao nibs
- 1/4 cup of dairy-free butter
- Some almond milk
- Icing for decorating
Method
1- Mix everything in the blender, if its too sticky, add some more milk and if too wet, add a little more almond meal or oats.
You can use red icing for decoration.
It is that simple. I chose to not add dates, but you can if you want and decrease the amount of maple syrup. Dates are an excellent form of fibre and great to use in cakes and protein balls
