These are not your usual flour, eggs and milk pancakes! If you know me, you would know that I am all about the healthier and cleaner option.
I have made banana pancakes previously which you can see in the recipe section, using banana and eggs and agave syrup.
Today I made quinoa pancakes:) They are more filling and super great as a brunch and lunch option too:)
1/2 cup of cooked quinoa
1/2 tsp of baking powder
1tsp of raw cacao powder
1/2 tsp of cinnamon powder
1/2 tsp of vanilla essence
topping: I used banana, almonds and some sifted icing sugar
1- Mix all the ingredients together, it is as simple as that
2-Add some coconut oil to a pan and spoon your batter and flip to cook on both sides
3-Stack them up as high as you like and add your toppings.
Quinoa is a great option as its high in fiber and low in fat and carbs. It makes a great alternative to flour. You can also use it to make pizza bases if you are a pizza fan like me and don’t want to be downing slice after slice of carbohydrate heavy bases, then this would be a great option.
Raw cacao is full of antioxidants that mop up those free radicals in your body which helps to keep you looking younger and helps combats numerous diseases. It is also a brain boosting and works as an immune booster. All all rounder goodness powder to add to shakes, desserts and even porridge in the mornings (my fav)
