Pancake recipe that will make you go coco…

Pancake day is around the corner, well tomorrow actually! So that is waking up an extra 15 minutes early to whip together this healthy pancake to start your day:) It is super filling and hardly calorific! I would wake up early everyday to make these yummies. I used coconut flour instead of plain flour so they are gluten-free:) 

Let’s get straight into it.

All you need to make about six 3 inch pancakes.

1tbs of melted coconut oil

3 eggs

2 mashed bananas

1/4-1/2 cup of coconut milk

1/2teaspoon of almond extract

1/4 cup coconut flour

1tbs of shredded coconut

1tbs of honey or agave syrup

1/4 teaspoon of baking powder

1tbs of mixed seeds

1/2 teaspoon of ground cinnamon

A few spoons of ricotta

a handful of blueberries

Method

1-Mix your bananas, milk and eggs, honey, almond extract, coconut oil using an electric whisk

2-Fold in the rest of the ingredients into the mix

3-Heat some coconut oil in the pan and put two tablespoon of the mix and form a circle in the pan

4-Get your hands ready to flip that pancake over when golden brown.

5-Repeat the above for the rest of the mix

6-Stack them up high, as high as you can make the better

7- Put a dollop of ricotta cheese (or yoghurt if you are inclined that way) and place some blueberries on top

Now sit back, grab a fork and knife and indulge.
