What great way to start the bank hols than some healthy baking.
Yes, you can put cookies and healthy in the same sentance and it can still make sense! Well with these gluten and dairy free cookies you can anyway.
No need for flour, oil or sugar, just healthy ingredients. The almond butter can be replaced with peanut butter if preffered or cashew nut butter but just as a tip, use butter that doesnt contain oil in them so the mixture isn’t too wet when placing on baking tray. I personally prefer them with almond butter.
Ingredients: (for around 10 small cookies)
1 tin of chick peas, rinsed, drained and dried well
just over 1/2 jar of almond butter
2 tablespoons of vanilla extract
1 teaspoon of baking powder
1/4 of a cup of honey
1/2 cup of chocolate chips- use dairy free if you like. (optional)
a pinch of salt
1- Firstly pre heat the oven to 175 degrees celcius.
2- Wash, drain and dry your chickpeas
3- Add all the ingredients into a food processor, minus the chcolate chips
3- Give it a good mix, scraping the sides as you go along.
4- Stir in the chocolate chips by hand.
5- Wet finger tips slighty, form small balls in your hand and place on tray patting them down using the back of a spoon
6- Stick it in the oven for 10 minutes. They will be soft, but will harden on cooling. Don’t be tempted to leave it in the oven any longer because they will taste very dry. Trust me on this one!
7- Allow to cool for 10-15 minutes on a tray.
They go very nicely with a cup of green tea or a latte. Put your feet up and enjoy.
I should call these 5 in 5 minutes, because literally I ended up eating 5 of these in 5 minutes. They are so addictive!
