If you knew me well then you would know that I am a complete pancake addict especially if they involve crunchy flaked almonds and dripping melted nutella-totally orgasmic.
Not all good things come in sweet packages:) I am trying to explore my savoury taste buds a little more and dampen my sweet tooth cravings if I am to keep up with a #cleanandlean image. Of course we can go off the rails a little bit and indulge every now and again, but I feel like recently, I have been reaching out for more of the unhealthy snacks. With it being the start of March, the early Spring season calls for more fresh fruit and vegetables:)
The clean and lean green pancakes make a great start for my way forward. As I pulled back the curtains this morning and saw the sun beaming through my window, I suddenly felt a sense of happiness and could almost smell the fresh Spring flowers blossoming. The feeling of Summer was just around the corner so I figured better I start eating clean if I have any hope of gaining a bikini body anytime soon.
The ‘clean and lean ‘ cult image is totally over taking the internet like storm. From celebrities trying their hardest to trim down their curvaceous bodies to new ‘healthy eating’ cook books being published every month. The clean and lean habit has totally engulfed the way we eat these days.
My favourite clean eating guru; Honestly Healthy came up with the perfect ‘green pancake’ idea. The name doesn’t sound too appealing, but trust me, these have been tried and tasted amongst the fussiest and hard to please eater friends of mine and I was glad to have received the thumbs up from their first bite.
All you need for about 4 pancakes:
-50g of spinach
-1 cup of almond milk
-50g of spelt flour or flour of choice
-1 tsp of coconut oil
-Two handfuls of kale
-1 garlic clove
-Salt and pepper for tasting
1-Whiz everything in a blender and spoon your batter onto a pan. Get flipping.
2-For the filling, cook the kale with a little coconut oil, add the chopped garlic and mushrooms and season to taste. Fill your pancakes with the kale and top with feta cheese.
You can fill with whatever you fancy, chopped almond or pine nuts make a good topping or goats cheese and kale also make a great combination.
I say again, tried and tested amongst the not so green population and received only positive comments.
