
Take a pizza of my heart now baby…
I will never eat a regular pizza now having tried this awesome spinach and pea based wheat-free pizza bases. With the being said, I did munch my way through a Pizza Express pizza the other day, although it was the ‘lighter option’ one.
They are not entirely gluten-free as I used Spelt flour, but you can use any type of flour you like. Using buckwheat flour would make them totally gluten-free.
All you need:
3/4 cup of almond flour
1 cup of spelt flour
A pinch of salt
two cups of spinach leaves
1 cup of frozen peas
1 cup of milk of choice
1 tablespoon of coconut oil
Method:
1-Boil your spinach and peas until soft and drain
2-Whiz together in a blender
3-Add your almond flour and spelt together with the salt and coconut oil
4-Spread out onto your tray and cook in the oven for about 20 minutes in at 170 degrees Celsius
5-Take out of the oven and pop on what toppings you like and cook for a further 10 minutes or so.
Slice up whilst hot and indulge! Seriously good pizza without the guilt. They go great with a dipping medium like humous or a side salad.
I used goats cheese (it was running out, hence the sparse amount), but you can load your pizza bases with whatever cheese or toppings you like:) My favourite are olives, mushroom and vegetables.
