Goat cheese with scrambled eggs topped with capers

I came across the lovely Rosie’s goats cheese and scrambled egg recipe and I couldn’t resist but give them a go. It was so delicious that  had to share it with you all. The topped capers make a salty alternative compared to my usual choice of mushrooms or spinach. They were eggceptionally good.IMG_2715

If you are feeling something a little different to your usual breakfast in the morning then give this a go. And if you are a lover of goats cheese like me, you will not be disappointed. Besides, it is a Rosie recipe, so no let downs on the menu.

All you need:

-3 eggs

-A dollop of coconut oil

-about two inches of goats cheese (more if you fancy)

-Salt and pepper to taste

-A tablespoon of capers

-Bread and butter to serve

Method:

1-Add some oil to a pan and crack open your eggs one by one and get stirring with a wooden spoon.IMG_2705IMG_2706

2-When the eggs are just about forming together, throw in your chopped goats cheese and mix. Add your salt and pepper.IMG_2711

3-Serve on toasted bread with some butter and add top with your capers.IMG_2715IMG_2720

They go perfect with a cup of latte or even better, a hot chocolate.

Eggceptionally great breakfast idea.

    This looks and sounds delicious, goats cheese is one of my favourite foods. I love Rosie’s recipes, my favourite is the cauliflower pizza one, we rarely eat regular pizza since discovering it! Thanks for linking up to #CityCountryLife

    I love scrambled eggs.
    I love Goat’s cheese
    But sadly I do not like my eggs mixed with anything so I will save the cheese to eat afterwards if that is OK! #CityCountryLIfe,
