
Ok so I know that sounds like a weird combination, I thought that myself when browsed through recipes using zucchini. My favourite combination was the lime and zucchini cake which I must make one day, and already thinking that an addition of walnuts would be even tastier.
It was the Macmillan’s coffee and cake sale at the tots school and we were all invited to bring/bake a little something.
So my effort involved a little deviation from the description of the word ‘cake’ and decided on a banana, zucchini and plum bread to bake. I must admit, I do prefer a bread sort of cake to go with my coffee than a full on sugary cake. Anyone else with me on this one?
I made this a gluten-free bread, for all you gluten-free eaters out there. However, if buckwheat isn’t your thing then substitute the flour for any other flour you fancy.
Ingredients
- 4 Bananas
- 1 small zucchini (150g roughly)
- 2 plums
- 400g Buckwheat flour
- 2tbsp chia seeds
- 1tsp of baking powder
- 6 tbsp of coconut sugar/brown sugar
- 1/4 tsp vanilla
- 1tsp cinnamon
- 3-4 tbsp of milk
Method
1- Mix your chia seeds with a little water and set aside
2- Mash your bananas, spiralize the zucchini and chop up the plums and set aside
3-Add your buckwheat flour, baking powder, sugar, chia seeds and vanilla to the bowl
4-Stir in the bananas, zucchini and milk. You might need to add a little extra milk if needed
5-Grease your tin and pour mixture into your baking tin and cook in the oven at 170 degrees until its golden brown or knife comes out clean.
The smell of the bread when taking it out of the oven caught me like flowers melt my heart. I didn’t wait for it to cool down. I cut myself a slice and spread some generous amount of butter spread, watching it melt away before I put it disappeared in my mouth. Divine.
I love the taste of warm bread with butter. I have recently discovered Kerrygold butter spread, which has to be the best butter that I have tasted to date. It is seriously this good and if you lobe your butters, then write this down and make sure you buy it on your next shopping round.
You can toast it and add whatever you fancy; be it cheese, jam or Nutella (my favourite toast topping). I also like peanut butter and honey topped with sliced banana and sunflower seeds! This is a must try, a great way to boost your protein, Vitamin E and antioxidants.
It was a sure great hit with the moms at school, and with the tot. If he gives it his seal of approval, then that is all that matters to me:)
