Another food post! I was craving nachos the other day! Well actually during Ramadan, I crave all sorts of foods, but yesterday it was nachos in particular and so took it upon myself to put together this light snack. I say light snack, but it was more like my midnight feast/snack. For those Vegan eaters out there, this one is for you:)
All you need:
1 can of cooked kidney beans (any type of other beans would also do)
half a red onion
2 tsp of cumin
1/2tsp chilli powder
Salt and pepper to taste
half a red pepper
a pinch of dill
1- For the beans: chop up the onions and fry with some oil, add your beans and spices and give it a good mix and cook for 15 minutes and you are all done! Spoon into the bowl.
2-Cut up the red peppers and some onions and mash the avocado and mix
3-Cut up the dill and mix in with your yoghurt.
4-Spoon the different mixtures in your bowl.
Get your cracker of choice and start dipping.
This snack is cracking, I tell you:) Give it a go. It is also great for Suhoor time with the beans being a great protein boost!
