Right let’s get down to chocolate talk.
My chocolate cravings were satisfied from just one bite! (but that didn’t stop me from eating more and more. Just one more bite I kept telling myself, but my sweet craving mind took over! Yikes! But hey its flourless and contains no refined sugar, so a win win recipe.
I am always on the look for guilt-free recipes to indulge on. This was taken from Lorraine Pascals cookbook. Her recipes tend to contain fewer calories than traditional similar recipes so it’s definitely worth checking out her book.
100g coconut flour
500mls hemp milk
50g raw cacao powder
120g light olive oil or dairy-free butter
130g (1/3 cup) agave syrup
2 tbsp almond butter
1 tsp vanilla extract
1-Set oven at 150 degree celsius |(300 F)
2-Sift coconut flour and cacao into a bowl
3-Add the hemp milk to a separate bowl together with the light olive oil, almond butter, eggs, vanilla essence and blend for about a minute.
4-Gently fold the coconut flour mix to the bowl and mix until you get an even and thick consistency.
5-Greaseproof your tin with butter and dust o some flour and shake it off (best trick to avoid mixture sticking to tin)
6-Bake for around 30-40 minutes, depending on the thickness of your cake. Insert a knife and if it comes out clean then it is ready.
7-Take out of tin and once it is cool, sprinkle some cacao powder on the top.
If you are really feeling being naughty then you can serve with a scoop of vanilla ice-cream:)
I added to the chocolate load by pairing a slice or two with a cup of dark hot chocolate:)
It has some yummy mummys seal of approval so a definite epic win here.
