Christmas Nut Roast in a Loaf

IMG_0490I thought I would start the ball rolling with the Christmas treats since we are on Day 15 till Christmas. I can’t believe we are around the corner to Christmas now. This year has definitely flow by.

You all know how I am totally nuts about nuts, well I took it upon myself to throw together a spur of the moment dish. I mixed a whole load of nuts together, with a couple of other ingredients and came up with this oh so delicious Christmas Nut Roast in a Loaf. It is so super duper tasty that I cut myself three chunky slices, and that was just the beginning.

All you need:

50g of ground almond flour

50g of walnuts

50g of hazelnuts

50g of cashew nuts

1 egg

100g of wholemeal bread crumbs

1 tbsp of mixed herbs

1 onion sliced

2 cloves of garlic (crushed)

250mls of vegetable stock

salt and pepper to taste

A drizzle of olive oil

25g of butter (I used dairy-free butter)

Thyme to garnish


1-Grind up all your nuts together and set asideIMG_0481

2-Melt the butter and mix in the onions and garlic and cook until soft ( 5 minutes)IMG_0477

3-Crack open the egg in the mixture and mix in the wholemeal breadcrumbs together with the nut mixture

4-Add the vegetable stock and stir.

5-Season with salt and pepperIMG_0479

6-Place in a loaf tin and cook in the oven at 180 degrees Celsius for 30 minutes or until it looks cooked and golden brown

7- Garnish with thyme. I realised I had none in the fridge and settled for Parsely.

IMG_0501Or even just butter! It is one seriously delicious loaf roast.  You can have it as a starter or a side to complement a main meal. Either way, it will go down very nicely and you will go nuts over it.
