Every health freak is hot on chia seeds right now:) I mean who wouldn’t be. They contain twice the amount of fibre than porridge, five times more calcium than milk, three times more antioxidant than blueberries and three times more iron than spinach and they are jam-packed with other goodies such as omega 3 fats, zinc and selenium etc.I find a pot of this stuff keeps hunger locked up till lunch:), all thanks to the high protein and fibre content).
The great thing about chia seeds is that they are so versatile. You can mix and match ingredients to suit you. Here is what I used for my chia seed pudding delight.
All you need:
-about a half cup of coconut milk yoghurt.
-a dollop of almond/coconut/rice milk
-2 tablespoons of chia seeds
-a couple of drops of vanilla eessence
-1/2 teaspoon of agave syrup
-some plums (hand picked from our garden)
You can be adventurous and add shredded coconut/seeds, whatever tickles your fancy really.
Pour in your milk into the cup and add the chia seeds. Stir in the yoghurt and rest of ingredient. Stick it in the fridge of an hour or two or over night. Once a sturdy pudding is formed, add a couple of plums on top and you are good to go.
