Who else is feeling really down now that Winter has hit us in the face?
Join my club. I hate Winter, worst Season for me for one reason, and one reason only! chilblains! This is the medical term used to describe small itchy small swellings that occur on the skin in reaction to cold temperatures. It sounds awful but really it’s not that bad, it is just uncomfortable. They go away after a few days, but it is just annoying that I have to make sure I don’t expose my extremities to cold temperatures!
So what better way to cheer myself up that a slice of apple and cinnamon loaf, (well a cheeky handful of nuts were added too for that crunch factor). I made this for a yummy mummy on our play date session and she loved it. It is INCREDIBLE! you have to give this a try. I made it healthier by submitting the caster sugar with honey.

175g of dairy free butter/margarine
175 g of golden caster sugar (or 3-4 tablespoons of agave honey)
1 teaspoon of vanilla extract
225 self-raising flour
1/2 teaspoon of ground cinnamon
4 rounded tablespoon of greek yoghurt
50g of walnuts, chopped
1-Heat the oven to 160 degrees celsius (Gas mark 3)
2-Beat the butter, honey (sugar if using) and vanilla then add the eggs and give it a good mix
3-Sieve the flour and add the cinnamon and yoghurt and mix
4-Peel and chop the apples into small pieces and mix into the mixture using a wooden spoon. Finally add the nuts and mix.
5-Scrape mixture into a loaf tin and bake on the middle shelf for 1 hour and 20 minutes until the skewer or knife comes out clean.
6- Dont over cook, otherwise the cake will get very dry. It may look like it need more time but trust me it will be perfect, as long as your knife comes out clean, it is done:) leave to cool on a wire rack
If you are feeling extra naughty you can melt 50g of toffee in a saucepan with 2 tablespoons of double creme/creme fraiche and add to to the top of the cake.
Make yourself a hot drink, be it apple and cinnamon tea to go with the cake, hot chocolate, latte or my fav a MOCHA and sit back and enjoy. Before you know it, one slice will turn to 3, 4 slices! Yikes!!
