
You have probably figured it out by now that I lurvveeee flapjacks. Especially the way I make them as I make them super healthy, well I OAT to say- I try to as much as possible. With this Apple and Oaty Flapjack receipe, I used sugar but you can substitute it with honey or agave syrup.
These are perfect with a cuppa and if kept in a sealed jar, lasts for several days so you can safely say you have a treat everyday for the next 7 days or so now that is something to get excited about.
All you need to make around 12 cookies:
200g of dairy -free butter
200g brown sugar (or 3-4 tablespoons of honey)
1 large egg
1/2tsp vanilla
3 tsp of ground cinnamon powder
1tsp of ground nutmeg
1tsp of ground ginger
200g of gluten-free flour
1/2tsp of salt
1 tbsp of baking powder
300g of apples
4tbsp of cornflour
120g of gluten-free rolled oats
70g of mixed seeds (optional)
175g of raisins
Method
1-Preheat oven to 170 degrees Celsius (Gas mark 3) and grease a large tray (9×12.5 inches) with a little butter and dust with some flour and shake off.
2- Sift the flour and baking powder into a large bowl and add the butter and mix them together to get breadcrumb like consistency.
3-Add the sugar and rolled oats together with the mixture and press half of the mixture into your tray
4-Peel and cut your apples into small chunks and mix with the cornflour and spices and place on top of the oat mixture in the tray.
5-Sprinkle over the raisins and mixed seeds and cover with the remaining mixture and press down gently.
6-Place in the oven and cook for about 30-35 minutes or until you get a golden brown colour.
Now pour yourself a cuppa, be it Green tea, latte, hot chocolate (my favourite) and munch on your cookies.
